First 10 days of September
Short cold maceration on the skins of crushed grapes to enhance the primary aromas. Followed by soft pressing, static decantation and fermentation in stainless steel with selected varietal yeasts at controlled temperature. Refermentation in autoclave according to the Charmat Method.
Exuberant and lively, with white flowers, acacia, wisteria, peach, green apple, and subtle notes of passion fruit and mango. Fresh, fragrant and velvety, with fine perlage and graceful texture.
Prosecco risotto, scallops au gratin, tapas and pinchos.
